Flourless Healthy Carrot Cake Cupcakes

Carrot cake is one of my sinful favorites, with that rich cream cheese frosting they are simply the best. But for a girl trying to slim down for her wedding probably not the best choice for me, that is why these are a great alternative to your traditional carrot cake. Not only are they healthy but they are very moist and flavorful and of course my favorite easy to make.

Ingredients
  1. 1 carrot
  2. 1 banana
  3. 6 tablespoons of almond milk
  4. 4 tablespoons of almond flour
  5. dash of baking powder
For the Icing
  1. 1 tablespoon of low fat cream cheese
  2. 3 tablespoons of greek yogurt
  3. 1 teaspoon of honey
Instructions
  1. Take your carrot cake ingredients and blend well in a food processor or blender. Then spoon into your muffin tin and put into your preheat oven at 200 degrees for about 15 minutes. While your cupcakes are cooling you can take your icing ingredients and mix thoroughly in a bowl. After the cupcakes have had a chance to cool slice in half and add a dollop of icing mixture to the middle and then top off with a dollop on top and you are ready to eat!
