Mexican Fajitas Crock-pot Recipe

Crock-pot Mexican Fajitas Recipe is a super fun easy recipe and of course my favorite because it is all contained in one container and makes it a easy go to recipe. This is so easy takes five minutes of prep time and then you are on your way to a tasty Mexican fiesta meal. As good as these are I wish they had a little more flavor I think next time I will add one more packet of taco seasoning and more Mexican seasonings.

So first you will want to slice up your onions and peppers and put into the bottom of your crock-pot you can use a variety of colored peppers to make this more festive I chose only green peppers because Larry cannot tolerate a lot of peppers lol. But a trio of maybe green, red and yellow would make this dish pretty and so tasty.

Now you want to add your boneless skinless chicken to the crock-pot I choose to use chicken thighs simply because they are usually so much cheaper than chicken breast but you can use the cut of your choice. Add a can of diced tomatoes I chose to use tomatoes with chillis.  Now comes the fun part and that is adding your seasonings to this dish. You want to simply sprinkle your taco dry seasoning mix all over the chicken, I coated one side and then flipped the chicken and coated the other side. Now you add a little chicken broth and cover and let this simmer. You can cook it for 4 hours on high or 8 hours on low and just let it simmer.

Now after this has cooked simply take your fork and break up your chicken it should just fall apart so easily. It will resemble pulled pork and just shred away. After you have broken up your chicken just simply stir together so all that juicy goodness coats the chicken really well and you are ready to eat. Just simply warm up your tortillas in the microwave by placing in a damp paper towel for about 45 seconds and you are ready to top off your fajita mixture with some cheese and sour cream and enjoy!

Ingredients
  1. 2 Medium Bell Peppers in colors of your choice
  2. 1 Medium onion
  3. 2 pkts of taco seasoning
  4. 1 pound of boneless chicken thighs or breast
  5. 1/2 cup of chicken broth
  6. tortillas
  7. shredded cheese
  8. sour cream
Instructions
  1. Slice bell peppers and onions in ΒΌ inch slices. Add to bottom of Crockpot.
  2. Sprinkle taco or fajita seasoning packet over bell peppers and onions in Crockpot. Add chicken breasts and chicken broth.
  3. Cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Remove chicken from the Crockpot and let cool slightly. Use two forks to shred the chicken. Add shredded chicken back to Crockpot and mix with peppers and onions.
  5. Serve over tortillas with your choice of toppings ( like cheese, salsa, guacamole, sour cream, fresh cilantro).
