Lasagna Soup Recipe

lasagna soup 1 This is a one pot lasagna soup that tastes just like lasagna but without all the mess and layers. This is a meal that got Larry’s seal of approval which says a lot considering he does not like marina sauce. I mean who does not love spaghetti? Larry that is who lol but he loved this dish. The best part of this dish is that it gives you the flavor and taste of a great homemade lasagna without all the mess and time  it takes to make your traditional lasagna.

To start this recipe you want to brown Italian sausage and your ground beef in a skillet until thoroughly cooked. While this is cooking you want to add your diced onion and minced garlic so they cook down as well. Once thoroughly cooked you will want to drain off your excess fat and add your seasonings.

In your crock-pot you will want to add your chicken or beef broth, your crushed tomatoes, your pasta sauce and then lastly add your meat mixture and cover. In your crock-pot you can cook low at 8 hours or high for 4 hours. Then about a half hour before you are ready to eat you w ill want to add your pasta noodles, your ricotta cheese and stir this up really well and then cover up and cook for another half hour. This is where this one pot lasagna really starts to take shape and makes your house smell amazing!!

Now at this point as you can see from my photo above this becomes more like a pasta and not so much like a soup so you can leave it like this or you can add more broth to thin it up. We chose to eat it like this and it was amazing. Now top off your pasta with some fresh Parmesan cheese and enjoy! This is a super easy dish that you should keep handy for those nights when you are tired and just don’t feel like cooking. It is so much easier than your traditional lasagna but has all the flavor of your traditional Italian Lasagna.

Ingredients
  1. 1/2 pound of ground beef
  2. 1/2 pound of ground italian sausage
  3. 1 medium onion diced
  4. 3 garlic cloves minced
  5. 2 bay leaves
  6. 1 tsp dried basil
  7. 1 container of beef or chicken broth
  8. 2 cans of diced tomatoes (I did diced tomatoes with garlic and olive oil)
  9. 1 jar of Prego Pasta Sauce (I did the garden vegetable with mushrooms and garlic)
  10. 2 tsp of Italian Seasonings
  11. 1 tsp of Oregano
  12. 1 tsp of Garlic Salt
  13. 1 tsp of sugar
  14. salt and pepper to taste
  15. 1 container of ricotta cheese
  16. grated Parmesan cheese
Instructions
  1. Preheat the Slow Cooker (Crock Pot).
  2. In a large skillet, over medium-high heat, add the ground beef and Italian sausage; cook until the meat is browned (drain off fat and discard). Add the onions and garlic and continue to sauté until translucent. Before you add this mixture to your slow cooker add your seasonings at this point.
  3. Transfer the beef mixture to your preheated Slow Cooker. Add the beef broth, diced tomatoes, spaghetti or marinara sauce, Italian seasoning and sugar. Stir all the ingredients together and then cover with the lid.
  4. Cook on high heat for 4 hours or on low heat for 8 hours.
  5. During the last 20 minutes of cooking (soup should be hot and bubbly), add the dried lasagna noodles and ricotta cheese and continue cooking until the noodles are al dente (soft with a slight bite).
  6. Serve soup in individual soup bowls and garnish with cheeses, fresh herbs, and enjoy!
