Happy Tuesday everyone! Today I wanted to share an easy and delicious recipe for a all in one pot pork chops dinner that I saw. Everyone that knows me if the recipe is easy and flavorful it is for me. This is a keeper as I tend to run out of ideas for yummy recipes for pork chops or dinner recipes and this one is not only good for you, but also tasty too. What I love even more is letting someone else do the hard cooking, a meal where I can throw everything into one pot and let is go is defiantly for me.

The other nice thing about this recipe is that you could easily adapt this recipe from a one pot recipe on the stove top to a one pot recipe for your famous crock pot. Just put everything into your crock pot and set it to low and forget it and walk away.

Ingredients
  1. 2 (6 ounce) boneless pork chops
  2. 1 large onion, sliced
  3. 1 (14 1/2 ounce) can stewed tomatoes, we like Italitan flavoured
  4. 2 medium potatoes, peeled and quartered
  5. 1/2 cup broccoli spear
  6. 1/2 cup cauliflower, spears
  7. salt and pepper
  8. vegetable oil cooking spray
Instructions
  1. 1 Spray a medium size frypan with veggies cooking spray; heat to medium high.
  2. 2 Add pork chops and sear on all side, about 5 minutes.
  3. 3 Add onion slices and cook 'til transparent and just turning brown, about 5 minutes.
  4. 4 Add stewed tomatoes; bring to a simmer, cover and simmer for 30 minutes.
  5. 5 Add potatoes around the outside of the pan; simmer 15 minutes, add broccoli and cauliflower and sprinkle with salt and pepper; simmer a further 15 minutes or 'til the potatoes are cooked through.
  6. 6 Serve hot.
