Strawberry Spinach Salad So my best friend Lisa and I absolutely love Wendy’s Strawberry fields salad the only problem is, this is only available from like May to August. The other issue is Wendy’s makes there with blue cheese which I hate, and we always substitute for cheddar cheese shredded. So I came across this recipe the other day and I had to share it is NOT the same as Wendys yummy salad but it is a nice alternative to get us by until May lol

Ingredients
  1. 1/3 cup raspberry vinaigrette (I purchase a low sugar version)
  2. 1 teaspoon salt
  3. 1/4 tsp yellow mustard
  4. 1/2 cup canola oil
  5. stevia or sweetener of choice, to taste
  6. 4 tsp poppy seeds
  7. 1 pkg (10 ounces) fresh baby spinach
  8. 1 pint fresh strawberries, sliced
  9. 1/2 cup coarsely candied pecans or walnuts, chopped
  10. Shredded cheese of your choice
Instructions
  1. Combine the vinaigrette, salt, mustard and sweetener. Blend or whisk until smooth. Gradually add oil while continuing to blend or whisk. Stir in poppy seeds and refrigerate dressing for at least an hour.
  2. Just before serving, toss the spinach, strawberries and candied pecans in a large bowl and top off with your favorite low calorie and low fat shredded cheese. Serve with dressing.
