Easy Egg Muffins full of protein

So I am trying to make meals ahead of time that are full of protein and healthy food options for my new job. Tonight I tried out the Egg Muffins I have seen in a few Gastric Support groups and they turned out really good! Remember you can add anything to these to suite them to your taste! I made two diffrent kinds and I will share both recipes below.

Ingredients:

  • 2 Roma Tomatoes
  • 1 Half diced Onion
  • Fresh Spinach Leaves
  • Shredded Cheddar Cheese
  • Ham cubes
  • Dozen eggs

For the first set of egg muffins I diced onions and cut up some fresh spinach and tomatoes and put into the bottom of the muffin tins and then covered with eats that had been beaten. For the second set of egg muffins I put in cubed ham and shredded cheese and then topped off with eggs. Bake in oven at 375 degrees for 30 minutes and enjoy!!!
