Garlic and Tomato Tilapia

4 So Lisa and I have been wanting to try new recipes to really motivate us to keep on a healthier track of eating. Fish is one of the things I have yet be able to eat but I am happy to say not only did it stay down but it tasted amazing I loved this recipe and it was so simple! Ingredients
  1. 3 Roma Tomatoes chopped
  2. garlic (I used chopped garlic fresh found in refrig section)
  3. parmesan cheese
  4. Italian Seasoning
  5. 2 tbsp Olive Oil
Instructions
  1. Use a cookie sheet and be sure to spray good with Pam or cooking spray so the fish does not stick to the pan. Preheat oven to 400 degrees. Put your tilapia fillets on cookie sheet, then sprinkle with your Italian Seasoning, then drizzle olive oil on your tilapia. Next sprinkle with parmesan cheese, and then use as much garlic as you like we used quite a bit and it was tasty. Finally top off with the diced tomatoes and place it in the oven. Bake for 20 minutes or until the sides of the fish start getting a slight golden brown in color. We served with fresh steamed broccoli.
