Roasted Veggies

It is not that I don’t like alot of vegetables but that I did not know how to cook alot of them, so this whole eating this has been a true learning experience for me. This is a super super easy recipe and would be perfect when you are BBQ to have this as a healthy side dish.

Ingredients
  1. 1 large sweet potato
  2. 2 large potato
  3. 1 cup of chopped up cauliflower
  4. 2 cup of chopped up broccoli
  5. 1 cup baby carrots
  6. 1 red pepper diced
  7. 1 red onion diced
  8. 1 bunch of fresh asparagus trimmed into 1 inch pieces
  9. 2 cloves of minced garlic
  10. 1/4 cup fresh basil
  11. 3 tablespoons of canola or olive oil
  12. salt and pepper to taste
Instructions
  1. Place everything into a baking pan or dish and put the oil and minced garlic on top mixed into the dish. Cook in the oven at 375 for about 30-35 minutes or until veggies are tender to your fork
